Cooking Menudo...

I rarely cook anything with tomato sauce except for our filipino style spaghetti... first of all not my fav, second since its not my favorite i dont have an idea on what it supposed to taste like and i cant spin it around and add my style.

Hence, i just followed whats on recipe and ommited things i dont like.


Ingridents posted above... i removed the liver, the garbanzos, tomato paste, hotdog, and the raisin for obvious reasons its not dog friendly -baka makain pa delikdo- then i started cooking.


I started with olive oil -a lot- and sautéed the onions, garlic, red bellpepper and the menudo cut meat until the meat is tender and a little brown.

Added the veggies so it will be a bit fried and crunchy... i like the meat and veggies cut in wedges. Easier for me and not that tedious in the overall prep.

Added oyster sauce to have that bit of sweetness.

Then added a little vinegar for the meat.

Once the vinegar is cooked i added the liver spread and mix it well.

Added a little bit of water before i add the tomato sauce.

This part is difficult for me.

After the menudo simmers i added one pouch of tomato sauce... salt and pepper to taste added paprika and nutmeg for more spices and fish sauce.

Then i let it simmer again... and then mixed it so the meat and veggies wont stick to the pot.

You can add more tomato sauce but i like it sweet and a bit spicy and the taste of tomatoes is not that strong.

When im ok with the taste... I served it steaming hot.
