Christmas Dinner

Every year, we plan what we serve during new year's... but since we're all spending Christmas at home (see last post) I was tasked to plan Christmas Dinner and everybody's been bugging me on what to cook las Noche Buena.

being busy with work... too busy to be exact, i really didn't have time to prepare or even think of what to cook.

Dec 20, this is the time where in we accept carolers at home since this is my brothers birthday... (this is our family day before Christmas) mom use to celebrate this day like its Christmas day already and we decided to do the same... I was listening to the carolers and it hit me... "nagluto ang ate ng "manok na tinola" at sa bahay ng kuya ay mayroong "litsunan" pa"... its like a light bulb appeared from nowhere... problem solved Ill cook tinola and litson with a twist for Christmas.

Actually the tinola was cooked the normal way, nothing extra special since I cant find a different recipe on how to cook it... but here's a picture...

but the lechon... its was a tough one... with the crunch time and all... I was really in a hurry.

During the office banchetto, I ate Hawaiian bagnet... siempre I asked why was it called Hawaiian and they answered it was marinaded in pineapples daw.. i felt that they already gave away the recipe so i decided to cook my lechon the same way

First, I boiled the pork... water, onions and lots of pepper same way our lola cooks it to make pork stock.
Then I removed the pork from the stock and instead of marinating it in pineapple... I boiled it in pineapple juice and sugar.
when its really tender. I let it sit for a couple of minutes and i plan  to turbo broil it but when i checked the time.. I opted to deep fry it slowly.

here's a pic... (disclaimer - it looks burnt because of the sugar i guess but if you use the turbo broiler i think it will be the same color as our normal lechon)

So that's how I planned our Christmas dinner... inspired by a Christmas song... very Christmassy isn't it?

PS

I'm so glad the carolers didn't dance the gangnam style or else I'm screwed hahahaha
