Chili Flakes/oil
Description:
I remember that night when we were driving along a highway when we decided to dropped by Abi's parents house in Antipolo... those were the days where we just drive and drive and drive around the metro...
to cut the story short, we invaded Tita's house and asked her whats for dinner... and my gawd we were surprised... she served us ADOBO with a twist... she added chili flakes and the "asim, alat and anghang" combination really rocks...
she thought me how to make these so called chili flakes, and all I need is an oven and a blender... their family really likes spicy food and I found other ways to use this flakes of hers in other dishes.
just sharing maybe you can find other ways too
Ingredients:
A LOT OF SILING LABUYO... (Small Red/Green Chili peppers)
Directions:
in a baking pan, spread olive oil or use a parchment paper the one they use in baking and scatter the chili's all over the pan.... bake slowly with medium heat... don't try to speed up the process or the sili's will burn.
once dry and toasted...
put everything in a blender and chop dice etc the chili's.
you have two options...
if you are an EXTRA VIRGIN OLIVE OIL kinda person... half bake the peppers then blend it with EVOO until its consistency thickens a bit... then add a few basil just to tone down the hotness of the pepper (oregano will do)
If you want to imitate the Chinese resto's ... just bake it and add a few drops of oil when your blending the peppers and add a little oyster sauce.
me I just like it plain and simple... just plain Chili Flakes will do... I just bake them and when its dry I chopped them and put it in a salt shaker and just put it on the table ready to use...
Note:
this is just served as an added spice to any dish... don't eat with rice... HAHAHAHAHHAA unless your a bombay
